Ingredients
  

  • 2 cups cooked rice preferably chilled
  • 2 eggs beaten
  • 1 tablespoon oil vegetable or sesame oil
  • 1 small onion finely chopped
  • 1/2 cup mixed vegetables carrots, peas, bell peppers
  • 2 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil optional
  • Salt and pepper to taste
  • Green onions for garnish

Instructions
 

  • Heat 1 tablespoon of oil in a large pan or wok over medium heat.
  • Add the chopped onions and garlic, sauté for 2-3 minutes until softened.
  • Add the mixed vegetables and cook for another 3-4 minutes.
  • Push the veggies to one side of the pan. Pour the beaten eggs into the other side and scramble until cooked.
  • Add the chilled rice to the pan and mix everything together.
  • Stir in soy sauce and sesame oil (if using). Season with salt and pepper to taste.
  • Cook for another 2-3 minutes, then remove from heat.
  • Garnish with chopped green onions and serve.
