- 2 cups all-purpose flour or gluten-free flour
- 1/2 cup granulated sugar or coconut sugar/maple syrup
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup whole milk or almond/oat milk for dairy-free
- 2 large eggs
- 1/4 cup melted butter or coconut oil for dairy-free
- 1 tsp vanilla extract
- For the Coconut Cream Filling
- 1 cup full-fat coconut cream or thick coconut milk
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
Preheat oven to 350°F (175°C) for baking or heat oil to 375°F (190°C) for frying.
Mix flour, sugar, baking powder, and salt in one bowl. In another, whisk eggs, milk, butter, and vanilla.
Combine wet and dry ingredients until just mixed. For baking, spoon dough into a greased doughnut pan; for frying, roll dough and cut shapes.
Baking: Bake for 12-15 minutes. Frying: Fry for 2-3 minutes per side.
Mix coconut cream, powdered sugar, and vanilla for filling. Refrigerate for 10-15 minutes.
Fill cooled doughnuts with coconut cream and top with powdered sugar or toasted coconut flakes.
