Ingredients
  

  • 2 cups cooked chicken shredded
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt optional
  • 1/2 cup celery diced
  • 1/4 cup red onion diced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 2 tablespoons fresh parsley chopped (optional)

Instructions
 

  • Prepare chicken: Shred 2 cups of cooked chicken. Set aside.
  • Chop vegetables: Dice celery and red onion. Chop parsley if using.
  • Make dressing: In a bowl, mix mayonnaise, Greek yogurt (if using), Dijon mustard, lemon juice, salt, pepper, garlic powder, and paprika.
  • Combine: In a large bowl, add shredded chicken, diced veggies, and dressing. Mix until well combined.
