- 4 russet potatoes
- 1 cup cottage cheese
- 1/2 cup shredded cheddar cheese
- 1 tbsp olive oil
- 1/4 cup chives or green onions, chopped
- Salt and pepper to taste
Preheat the air fryer to 375°F (190°C).
Scrub and pierce the potatoes, then cook in the air fryer for 35-40 minutes until tender.
Let the potatoes cool slightly, then slice them in half and scoop out the flesh, leaving a small border.
