Ingredients
  

  • 2 cups einkorn flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 3/4 cup milk or dairy-free milk
  • 1/4 cup melted butter or oil
  • 1 large egg

Instructions
 

  • Preheat the oven to 375°F (190°C) and grease a muffin tin.
  • In a large bowl, mix together einkorn flour, baking powder, salt, and sugar.
  • In a separate bowl, whisk together milk, melted butter, and egg.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Spoon the batter into the muffin tin, filling each cup about 3/4 full.
  • Bake for 15-20 minutes, or until golden brown and a toothpick comes out clean.
  • Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
