Ingredients
  

  • 4 fishcakes
  • 8 scallops
  • 1 bell pepper sliced
  • 1 cup snap peas
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce optional
  • 1 tsp ginger grated
  • Salt and pepper to taste

Instructions
 

  • Heat 1 tbsp of olive oil in a pan over medium heat.
  • Add fishcakes and cook until golden and crispy, about 4-5 minutes on each side. Remove and set aside.
  • In the same pan, add another tbsp of olive oil. Sauté garlic and ginger until fragrant.
  • Add scallops and cook for 2-3 minutes on each side until seared. Remove and set aside.
  • Add bell pepper and snap peas to the pan. Stir-fry for 3-4 minutes until tender-crisp.
  • Return fishcakes and scallops to the pan. Add soy sauce, oyster sauce, salt, and pepper. Stir to combine.
  • Serve and enjoy!
