Ingredients:
- - 3 ½ cups 450g all-purpose flour
- - ¼ cup 50g sugar
- - 1 tsp salt
- - 2 ¼ tsp 1 packet active dry yeast
- - ¾ cup 180ml warm milk
- - 1 large egg
- - 6 tbsp 85g softened butter
- - 8 tbsp 115g chilled butter
- - 1 egg yolk + 1 tbsp milk egg wash

Activate yeast: Mix warm milk and sugar, sprinkle yeast, and let sit until frothy (5-10 min).
Make dough: Combine flour, salt, yeast mixture, egg, and softened butter. Knead until smooth (8-10 min). Let rise for 1 hour.
Laminate dough: Flatten chilled butter into a 6x6-inch square. Roll dough into a 12x16-inch rectangle, place butter in the center, fold, and seal. Roll, fold into thirds, chill for 20-30 min. Repeat twice.
Shape Gipfeli: Roll dough, cut into triangles, and roll into crescents. Place on a baking sheet.
Bake: Preheat to 375°F (190°C). Brush with egg wash, bake 15-20 min until golden. Enjoy warm!
