Ingredients
  

  • 1 lb ground chicken
  • 1 can 15 oz corn kernels, drained
  • 1 bell pepper diced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add diced onion and bell pepper. Sauté for 3-4 minutes until softened.
  • Add garlic and cook for another minute.
  • Stir in ground chicken and cook until browned.
  • Add corn, cumin, chili powder, salt, and pepper. Stir to combine.
