Ingredients
  

  • Beef chunks: 500g
  • Leeks: Several stalks
  • Carrots: 2 sliced
  • Celery: 2 stalks chopped
  • Garlic: 2 cloves crushed
  • Barley optional: ½ cup
  • Beef broth: 1 liter
  • Olive oil: 2 tbsp
  • Salt and pepper: To taste
  • Thyme and bay leaves: As desired

Instructions
 

  • Sear Beef: Brown beef chunks in olive oil in a large pot. Remove and set aside.
  • Sauté Veggies: Sauté sliced leeks and crushed garlic in the same pot until soft.
  • Add Vegetables & Beef: Stir in carrots, celery, and return beef to the pot.
  • Add Broth & Barley: Pour in beef broth and barley (if using), then add thyme, bay leaves, salt, and pepper.
  • Simmer: Bring to a boil, then reduce to a simmer. Cover and cook for 1-2 hours.
  • Serve: Taste and adjust seasoning. Remove herbs and serve hot.
