Ingredients
  

  • 2 cups shredded rotisserie chicken
  • 6 cups chicken broth
  • 1 tbsp olive oil or butter
  • 1 medium onion chopped
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 3 garlic cloves minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 bay leaf
  • ½ tsp black pepper
  • Salt to taste
  • Optional: 1 cup egg noodles frozen peas, lemon juice

Instructions
 

  • Sauté onions, carrots, and celery in olive oil until softened. Add garlic and cook for 1 minute.
  • Add chicken broth, shredded chicken, thyme, parsley, bay leaf, and black pepper. Bring to a boil.
  • Reduce heat and simmer for 15-20 minutes. Add optional noodles or peas in the last 10 minutes.
  • Adjust seasoning with salt and pepper. Serve hot with fresh parsley or grated Parmesan
