- 2 cups shredded rotisserie chicken
- 6 cups chicken broth
- 1 tbsp olive oil or butter
- 1 medium onion chopped
- 2 carrots sliced
- 2 celery stalks chopped
- 3 garlic cloves minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 bay leaf
- ½ tsp black pepper
- Salt to taste
- Optional: 1 cup egg noodles frozen peas, lemon juice
Sauté onions, carrots, and celery in olive oil until softened. Add garlic and cook for 1 minute.
Add chicken broth, shredded chicken, thyme, parsley, bay leaf, and black pepper. Bring to a boil.
Reduce heat and simmer for 15-20 minutes. Add optional noodles or peas in the last 10 minutes.
Adjust seasoning with salt and pepper. Serve hot with fresh parsley or grated Parmesan
