- Base Ingredients:
- 1 cup zucchini or cauliflower rice
- 100 g firm tofu crumbled
- ½ avocado sliced
- Vegetables:
- 1 cup spinach or kale chopped
- ½ cup bell peppers diced
- ¼ cup red onion chopped
- ½ cup cherry tomatoes halved
- Seasonings:
- ½ tsp garlic powder
- ¼ tsp paprika
- Salt & pepper to taste
- 1 tbsp olive oil
- Optional Add-Ons:
- ¼ cup shredded cheese
- Fresh herbs
- 1 tbsp nuts or seeds
Prepare Veggies: Chop veggies and slice avocado.
Sauté: Heat olive oil, cook onions & peppers 3-4 mins. Add tofu, cook 5-6 mins until golden.
Add Greens: Stir in spinach and cauliflower rice, cook 3-4 mins.
Season: Add garlic powder, paprika, salt, and pepper. Mix well.
Serve: Plate mixture, top with avocado, and optional toppings. Enjoy!
