Instructions
Preheat oven to 400°F (200°C).
Wash and scrub the sweet potatoes, then pat them dry.
Cut the potatoes into 1-inch cubes.
In a bowl, toss the cubes with olive oil, salt, pepper, and optional garlic powder or herbs.
Spread the potatoes on a baking sheet in a single layer.
Roast for 25–30 minutes, turning halfway, until golden and tender.
Serve warm, optionally garnished with fresh herbs.
