Ingredients
  

  • 2 medium purple sweet potatoes cubed
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 –2 sprigs fresh rosemary or thyme optional
  • ½ teaspoon garlic powder optional

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Wash and scrub the sweet potatoes, then pat them dry.
  • Cut the potatoes into 1-inch cubes.
  • In a bowl, toss the cubes with olive oil, salt, pepper, and optional garlic powder or herbs.
  • Spread the potatoes on a baking sheet in a single layer.
  • Roast for 25–30 minutes, turning halfway, until golden and tender.
  • Serve warm, optionally garnished with fresh herbs.
