Ingredients
  

  • 1 medium butternut squash peeled and diced
  • 1 can kidney beans drained and rinsed
  • 1 onion chopped
  • 2 garlic cloves minced
  • 2 tomatoes chopped
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon turmeric
  • ¼ teaspoon chili flakes optional
  • Salt and pepper to taste

Instructions
 

  • -Heat olive oil in a large pot over medium heat.
  • -Add chopped onion and minced garlic, sauté until softened.
  • -Add diced butternut squash, kidney beans, and chopped tomatoes. Stir to combine.
  • -Pour in vegetable broth and bring to a boil.
  • -Reduce heat and simmer for 20-25 minutes, until squash is tender.
  • -Stir in cumin, paprika, turmeric, chili flakes, salt, and pepper. Adjust seasoning to taste.
  • -Serve hot, garnished with fresh parsley and chili flakes if desired.
