Ingredients
  

  • 2 cups heavy cream
  • 4 large egg yolks
  • 1/4 cup grated Parmesan cheese optional
  • 1/2 teaspoon salt
  • 1 teaspoon fresh thyme chopped (or herbs of choice)
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons granulated sugar for topping
  • Unsalted butter for greasing ramekins

Instructions
 

  • Preheat oven to 325°F (160°C). Grease ramekins.
  • Heat cream with thyme until steaming. Let steep 5 minutes.
  • Whisk egg yolks with Parmesan, salt, and pepper.
  • Slowly whisk in warm cream. Strain mixture.
  • Pour into ramekins. Place in a water bath.
  • Bake 30–35 minutes, until just set.
  • Cool, then chill for at least 2 hours.
  • Sprinkle sugar on top. Caramelize with torch or broiler.
  • Let sit 1–2 minutes. Serve and enjoy!
