Ingredients
  

  • Base:
  • 4 cups vegetable or chicken broth
  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • Vegetables:
  • 2 carrots diced
  • 2 celery stalks chopped
  • 2 potatoes cubed
  • 2 tomatoes chopped
  • 1 cup spinach or kale chopped
  • Seasonings:
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Optional Add-Ins:
  • 1 cup cooked lentils or beans
  • ½ cup cooked rice or pasta
  • Fresh parsley for garnish

Instructions
 

  • Prepare Vegetables: Chop all vegetables into bite-sized pieces.
  • Sauté Aromatics: Heat olive oil in a large pot, sauté onions, garlic, and celery for 3-4 minutes.
  • Add Vegetables & Broth: Add carrots, potatoes, and tomatoes. Pour in broth to cover vegetables.
  • Season: Add thyme, bay leaves, salt, and pepper. Simmer for 30-40 minutes until vegetables are tender.
  • Finish & Serve: Stir in spinach or kale. Garnish with fresh parsley and enjoy!
