- Base:
- 4 cups vegetable or chicken broth
- 2 tbsp olive oil
- 1 medium onion chopped
- 3 garlic cloves minced
- Vegetables:
- 2 carrots diced
- 2 celery stalks chopped
- 2 potatoes cubed
- 2 tomatoes chopped
- 1 cup spinach or kale chopped
- Seasonings:
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
- Optional Add-Ins:
- 1 cup cooked lentils or beans
- ½ cup cooked rice or pasta
- Fresh parsley for garnish
Prepare Vegetables: Chop all vegetables into bite-sized pieces.
Sauté Aromatics: Heat olive oil in a large pot, sauté onions, garlic, and celery for 3-4 minutes.
Add Vegetables & Broth: Add carrots, potatoes, and tomatoes. Pour in broth to cover vegetables.
Season: Add thyme, bay leaves, salt, and pepper. Simmer for 30-40 minutes until vegetables are tender.
Finish & Serve: Stir in spinach or kale. Garnish with fresh parsley and enjoy!
