  • Wet Ingredients:
  • 1 cup coconut milk
  • ½ cup ube halaya
  • 1 egg
  • 2 tbsp melted butter or oil
  • 1 tsp ube extract optional
  • ½ tsp vanilla extract
  • Optional Toppings:
  • Maple syrup fruits, whipped cream, or toasted coconut

Instructions
 

  • Mix Wet Ingredients: Whisk coconut milk, ube halaya, egg, butter, ube extract, and vanilla until smooth.
  • Combine Dry Ingredients: Sift flour, sugar, baking powder, and salt in a bowl.
  • Mix Batter: Add dry ingredients to wet mixture, stir gently until combined.
  • Heat Pan: Grease skillet, heat on medium.
  • Cook Pancakes: Pour ¼ cup batter per pancake, cook 2-3 mins until bubbles form, flip, and cook 1-2 mins.
  • Serve: Stack pancakes, add toppings, and enjoy!
